Recipe and blog recommendation

Good morning!

I just want to stop by and share a super easy recipe and recommend a blog I really like. Tired of Christmas dinners? I am … So yesterday I made a simple omelette instead. Nothing fancy, but still nutritious.

All you need for three people is:

  • 6-8 eggs
  • Some water/milk, I guess something like 6 tablespoons
  • Vegetables of your liking (I used spring onion, garlic, cherry tomatoes and paprica)
  • Enough slices of cheese to cover the omelette
  • Pinch of salt and pepper
  • I also added some chorizo we had leftover to spice it up (you don’t need much salt because of that)

I start by mixing the eggs, water, vegetables and the sausage. Then pour it in a pan on medium heat using coconut oil. You can use olive oil or butter if you like, but if you are a fan of coconut, I recommend trying it with eggs – that’s really tasty! Add the cheese and some basil on the top. Serve with for instance (sourdough)bread and maybe a salad.

If you want you can also chop potatoes, boil them and add them to the omelette. Or if you have leftover potatoes from yesterday’s meal. Cold omelette with potatoes can also be a great option for your lunch the next day. Cold potatoes contain something called resistant starch, which the good bacterias in the intestines love, and thereby this will aid digestion, and make you feel full longer without the heavy feeling. A little extra advice there.
